I have had celiac disease for 16 years. At first I had to mourn the food that I couldn’t eat. And my friend who almost died from it (down to 83 pounds!) said, “It’s just food.” I try to remind myself of this when I’m feeling frustrated. I’m good at home, but it is hard when I go on vacation or out to a new restaurant. I do consider myself lucky that there are so many more options now. And now that I have gained all of the weight back and then some, I need to remind myself that just because it is gluten free doesn’t mean it is healthy.
